Nice points, and since you seem to have some info on this hidden underground of wait staff, here's another question I have: What is the cause of the disappearing waiter? The food comes, they check in once as usual, and then seem to forget about you entirely. I'm not talking about the "My drink has been empty for 5 minutes" disappearance, I'm talking about the "It's been 45 minutes since he was last here and we finished our meals 15 minutes ago.." type of disappearance. Where does the waiter/waitress go for these extended periods of absence?

Well, there *is* a variation on this and that's the service point commandment that a waiter must check back between 1 and 3 minutes (the time depending on the restaurant) and perform a quality check. This is oftentimes a very important service point checkmark that a waiter receives if the guest happens to be a "secret shopper". And, believe me, this is one of those 5 point out of a possible 5 point deduction if it isn't accomplished within the stated time frame.

This is to insure that your steak is cooked properly or your salad doesn't have a pubic hair lurking within. This checkback allows you to express satisfaction or dissatisfaction after getting the chance to sample your food (yes, I know that sometimes you're asked before you've even had a chance to tuck into your steak - baaaaad waiter!)

The polished server will wait as long as possible to ask the question, but it isn't always possible to assure that everyone at the table is in between bites or sentences, especially when they need to greet that new table or run food to table 12.

I'll admit that I'm guilty of interrupting conversations sometimes, something I really try to avoid. But it seems like as you're approaching the table to see if anyone needs another round or if they have everything they need and you've sensed a lull in the conversation only to find that you arrive at the exact moment when someone who was carefully considering a response to a snippet of conversation that you didn't hear decides at that very nanosecond to start talking.

On the other side of the coin, not much is more annoying than people who don't give you the chance to break into the conversation at any point in the meal. Everytime you come by, the participants are locked into conversation, eyes fixed on each other. The waiter is never even given a sidewards glance. while I applaud such a social connection, many times, those people will finally decide to include the waiter into their private universe and they'll give the unsaid question through their tone "It's about time - where have you been? I haven't seen you all night!"

I'm just sayin'...
